I love to drive to Newton, Iowa to buy a wheel of Maytag Blue Cheese when I’m visiting my family. In my opinion, it’s the best domestic blue cheese you can buy. The first thing I do is to cut it into quarters. I usually give a few large slices to friends, keep about a quarter for myself to use in the next 2-4 weeks and Seal a Meal the rest. Sealing cheese in a vacuum packed bag keeps it fresh for 4 – 8 months instead of 2-4 weeks in a refrigerator. No mold and it is as fresh as the day you bought it. If you go to the factory store be sure and pick up the sheet of party recipes using Maytag blue cheese.
